(FORTUNE Magazine) – I had no idea what I could do with a degree in marine science, but I just knew that I loved the ocean. Now I'm responsible for all the water features at Atlantis. That includes the aquariums as well as the pools and the slides. I have people who run the day-to-day operations, so I don't get to do all the fun stuff that they do anymore.

Occasionally I go inside the exhibits and do a swim-through, or what we call a "wet walk-through," and look at everything. There are things you certainly could not see unless you get inside the exhibit itself.

The fish eat a variety of seafood. The guy who makes their food prepares 1,000 pounds a day. Everything is cut by hand. In fact, we get it from the same place where the hotel orders the food for its guests. --Interview by Julie Schlosser
